I fully realize just one week after committing to sharing our meal plan on the blog, that I didn’t post…. but life happened. My grandfather passed away and all the plans went out the window! So last week was a mix of leftovers from a block party we hosted on Saturday (yes, whirlwind week to NH then back in time to throw a party) and meals I was planning on making the week prior. So here is what is on the menu for this week!

Tuna Noodle Bake & Roasted Broccoli
A childhood classic even the adults enjoy!
Chicken Enchiladas & Black Beans
Delicious and easy to put together! I lighten this recipe up by making a roux in lieu of cream of chicken soup (& throw in a bouillon cube), and greek yogurt instead of sour cream.
Sloppy Joes w/ Roasted Root Vegetables
This recipe sneaks a lot of vegetables in which I love for the kids! Sneakiness aside, these have excellent flavor to boot. I’ll do a sheet pan of roasted vegetables (Brussels sprouts, potato, onion, sweet potato, broccoli drizzled with olive oil salt, pepper, & Italian seasoning at 425 for 30-40 minutes) on the side.
Grilled Chicken & Kale Salad w/ Cranberries, Feta, & Walnuts
Balsamic grilled chicken pairs beautifully with the kale salad. The kids will probably have leftover veggies from the night prior…
Cobb Salad w/ Grilled Chicken
If you haven’t made this salad, do it this week! It is so flavorful and makes you forget you are eating healthy. Although this is on the higher calorie side of salads, it is still a salad!
