Meal Plan Week 22

GUYS I meal planned. I planned meals for my family. Actually, I have for the past couple weeks, but to actually put a blog post together was out of the question. I am a huge fan of summertime, but summer is not conducive to productivity in the whole blogging department. So anyway, here we are with a plan! On Tuesday. But a plan nonetheless! And with an added bonus of a refresh of graphics (insert celebrating emoji). Hope you all had an amazing summer and are having a great start to your school year! I am excited for organization, some time to do things outside of taking my kids places, and get my house under control.

Recipe from Half Baked Harvest Super Simple.

Pumpkin mini muffin recipe

(from my old neighbor in NH HI TRACY) (can also make 2 loaves of bread)

Ingredients:

4 eggs

2/3 cup water

1 cup olive oil

2 cups (or 1 16 oz can) puree pumpkin

3-4 shredded carrots

3 1/3 cup flour

2 tsp baking soda

1 1/2 tsp salt

1 tsp cinnamon

1 tsp nutmeg

pinch powdered cloves

1 1/2 cups sugar

Beat eggs. Add oil, water, pumpkin, and carrots and mix. Add flour, sugar, salt, baking soda, spices, and mix. Add sugar and mix. Bake at 350 degrees and bake for 7-10 minutes. If making loaves, bake for 50-60 minutes.
